There's a few things to do when you get home from shopping that have helped me to save on time.
1- Split chicken into two 1-gallon size ziplocs. Squeeze a lemon into each bag. Add a splash of olive oil and season with a little salt and Italian Seasoning into each bag. Put into fridge for 2 hours. Then, grill all of the chicken on the the bbq, or broil in the oven. This is the chicken that you will be using for the week. It will be ready and on hand and save so much time.
2- Wash 1 head of lettuce and chop into salad size bites. Store in ziploc or airtight container.
3- Wash all your fruit and veggies before storing.
4- Make Pico de Gallo and store in a container to be used for the rest of the week.
Pico de Gallo (this will be our saving grace for salads since we won't be using dressing)
-4 roma tomatoes, diced
-1/4 cup chopped onion
-a handful of cilantro, chopped
-1-2 jalepenos, de-seeded and finely diced
*Mix all together. Squeeze half a lemon over top and season with a little garlic salt. All done. Store in an airtight container to be used for the week
